Single Malt vs. Single Cask
Many of the whiskies we offer are classed as single malt. A single malt whisky is a malt whisky that comes from only one distillery. It is usually the product of several years of distillation blended together to achieve the ideal balance of flavour. We also offer several different single cask whiskies. A single cask whisky is one that is the product of only one cask (barrel). This means that the whisky in your bottle will be the product of only one year, unblended as nature (and the master distiller) has made it. We also offer our single cask whiskies in a cask strength version – which is bottled literally as it comes out of the cask. Non chill-filtered, and with all the original flavours completely intact. Your bottle of single cask malt will be individually numbered to prove its authenticity.
Old Malt Whisky
30, 40 and 50 year old Malts are incredibly rare. Because whisky (unlike wine or Champagne) does not develop any additional complexity or flavour once bottled, if you want a 50 year old whisky, it must by law have been sitting in a cask (barrel) for 50 years. This makes the finished product more expensive than younger malts for two reasons. Firstly – there is a substantial cost associated with storing a large cask of whisky for 50 years (and you thought your mortgage payment was high?!). Secondly, a portion of the precious whisky evaporates through the walls of the cask every year (this is known rather romantically as the Angels’ Share).
